Pine nuts actually grow inside a pine cone. To extract the nut, the cone must be gently heated. This labor intensive process is why these nuts are so expensive. Softer then the Chinese pine nut yet more earthy in flavor, they are frequently used in salads and a-top vegetables, but are most commonly used to make pesto. Keep refrigerated for maximum freshness.
